Some nights you just need a few essentials

For me, tonight is that night. With the snow falling outside and spaghetti and meatballs in my near future. Sitting and reading a good book with a glass of vino is just what I needed.

Today the ladies and I decided to ditch the 'hood and head downtown to the Food Truck Mecca that is Civic Center Eats.  Every food truck in town commences to Civic Center every Tuesday and Thursday.  This is the place to get every type of food you could ever want.  Tacos - got it, Burgers - got it, Ice Cream - got it, Greek food - got it, Cajun - got it.  When I said they had every type of food, I meant it!

I decided to go with the Denver Biscuit Company a delish biscuit with fried chicken and honey butter.  Amazing and calorie free...........I kid, not about it being amazing though.



My friend went with Pince Tacos which are also completely amazing.

If your near downtown on a Tuesday/Thursday make a point of heading down to Civic Center Eats, guaranteed to find something you want.



Lemon Bars

                                       
This past weekend was the last Jazz in the Park at City Park.  If you live in the Metro Denver area and have not been to this summer must-do put it on the calendar for next year.  It is the perfect way to spend a Sunday evening; relaxing in the park, drinking wine, listening to music. I think most of us don't actually enjoy Sunday's but rather just get ready for the week; laundry, grocery shopping, cleaning, boring.  Jazz in the Park is the perfect excuse to put all of your to-do's on the back burner.

It's always fun to see all of the food everyone brings to park; you can have a group with a meal fit for the Four Seasons and the next group has fried chicken.  Both completely acceptable.  I came up with the menu that would be the easiest to transport, thanks to our handy bento box.

These Lemon Bars are delish all year round, but especially good in the summer when you don't want a heavy dessert.  These are easy and quick to make.  Just go out to your lemon tree, a wish for someone from Colorado.  Ok pick the freshest lemons at local Grocery store for this recipe, I recommend meyers lemons they really give that lemon taste.

LEMON BARS
Crust
2 c. flour
1/2 c. powdered sugar
1 c. butter, softened
Mix 2 c. flour & 1/2 cup powdered sugar.  Cut the butter into the mixutre with a pastry blender, I think it's just as easy to mix with your hands.  Press the mixutre into a lightly grested 9x13 pan.  Bake at 350 for 20 to 25 minutes.
Lemon Mixture
4 eggs
1/4 c. flour
2 c. sugar
1 tsp. baking powder
1/3 c. lemon juice
Powder Sugar to dust on top
Whisk eggs, sugar, & lemon juice.  Mix remaining flour & baking powder.  Whisk into egg mixture.  Pour batter into crust.  Batke at 350 for additional 25 minutes or until set.  Let cool, sprinkle powder sugar evenly.

Hi All,

Welcome to my new blog Just a Dash and a Glass, a blog around food and wine.  And yes I know what your thinking, WOW how innovative a blog about food and wine.  No one has thought of that yet.  True I am not the first to think of this, but after making the same 10 dinners I realized my creativity needed a boost.  So really I guess this blog is for me and you.  I hope you enjoy tagging along with me as I share my fav recipes and wines and try new ones.  I happen to live in one of the best neighborhoods in Denver, and enjoy everything the Highlands has to offer.  So you might hear me brag about the restaurants and fun events that go on around my neighborhood.  I hope you enjoy this blog as much as I do!
